What does one do on the perfect Sunday? This is different for everyone, but for me it is baking with your best friends while listening to music, talking about life and drinking a good glass of wine. That absolutely perfect Sunday was a week ago when my best friend from the other side of town came over and we made vegan Snickers Bars. As you might know from my last recipes (vegan coconut chocolates, vegan chocolate, homemade bounties and german “lebkuchen”) I really like making common candy healthy and if possible vegan. (If you have a favorite candy you´d like me to make healthy comment below!)
This snickers bar recipe is waaaay better than the original snickers, it´s healthy, super yummy and consists only of natural ingredients. What better combination is there?! But I am warning you: these are pretty high in calories due to the nuts (but still healthy calories!!! There is a difference!) another disclaimer:
These are highly addictive.
With that being said let´s get baking!
Before you start make sure you have a friend with you, a glass of wine and good music! It makes the whole process easier and more enjoyable!
What else you´ll need
For the Nougat part
- 1/2 cup peanut/almond butter
- 2 tbsp agave
- 1 1/2 tbsp flour of your choice
For the Caramel part
- 12 pitted dates
- 1/3 cup water
- pinch of salt
- 1/2 vanilla extract
- 1 tbsp coconut oil
For the chocolate
- 1/4 cup coconut oil
- 1/2 cup cocoa powder

What you´ll need to do is start off by combining all the ingredients for the Nougat part of the Snickers in a bowl.
Once you have a thicker creamy consistency, transfer the dough onto a sheet of baking paper. Using your spoon first smooth out to create a large rectangle. Then folding the remaining baking paper over to smooth out everything perfectly to create a perfect top.
Place into freezer for about an hour to five hours depending on whether you used almond or peanut butter. Peanut butter hardens faster than almond butter does.
For the Caramel blend all the ingredients in a blender. Take out your Nougat and smooth out the Caramel on top.
Then you can press your desired amount of almonds or peanuts onto the big bar. Freeze again.

Once you have liquid chocolate to work with the process becomes a bit more tricky. But first take out your bar from the freezer and cut into your desired sizes and shapes. Then coat the snickers with chocolate. You can do this by dipping the bars in the chocolate, but this way the bar may lose it´s shape. We solved this problem by putting everything on a piece of parchment paper, coating the top with chocolate using a spoon and then turning everything around and repeating the same thing. Works wonderfully!
Now freeze everything again for about 15 minutes, decorate on a plate and enjoy the addictive goodness of your homemade vegan snickers. I recommend eating these with a good friend, a relative, your favorite person along with a good glass of wine or a cup of tea.
