I have a Fall Bucket List, which I am working on completeing at the moment. A point on it is baking an apple pie. What a coincidence that my neighbor just turned 90, I am stuck with a cold and spare time on my hands at home and feel like eating something that makes me fuzzily warm inside!
So I got into the kitchen, found a few recipes for apple pies and got baking. I ended up sticking to none of the recipes. Typically me. But…
that makes this recipe 100% my own creation.
It is healthy, lactose free (as my body does not tolerate lactose in my food), hearty, crunchy and just tastes exactly like fall should taste! If you´d like to know how you, too, can make fall into a cake, just join my Sunny’s Sweet Sunday Party by keepin´ on readin´!;-)

What you´ll need
Cake base
- 2 1/4 cups flour
- 1 cup oats
- 1/2 cup soy milk
- 1 small packet of yeast (enough for 500 grams flour)
- 1/4 cup brown sugar
- 3 eggs
- 1/4 cup sesame oil
- pinch of salt
- gingerbread spices: ginger, cinnamon, nutmeg, star anise, …
Topping
- 3 large apples
- agave
- cinnamon
- lemon
Instructions
In a bowl combine all dry ingredients. Heat up the soy milk a bit. Follow the instructions for your yeast: either add it to the dry ingredients (like I did) or add it to the soy milk and let it simmer a bit.
Add the rest of the ingredients for the base and stir well. Let sit for a bit.
Cut up the apples in slices. Pour a bit of lemon juice in a bowl, along with the agave and the cinnamon. Add the apples and mix well.
Equally distribute the dough in a cake platter (round or rectangle – it´s up to you!). Add the apples on top and sprinkle with a bit of gingerbread spices – just for the looks;-). I first put the apples up right pressing them in the dough and then went over them, laying them against each other, like little dominoes that can´t fall, ´cause they´re all up against each other…if that makes sense! Maybe this picture describes it better than me and my words;-)
Put the cake in the oven at medium-high heat for at least 30 min. Depending on whether you want it more crisp or more gewey take it out later or earlier!
Take out and let cool for just a bit. This tastes served warm the best! Just like Fall and Christmas combined in one cake!!!
