Vegan Coconut Lemon Cake // Sunny’s Sweet Sunday

There’s a story behind my original vegan coconut lemon cake recipe.


Let me tell you…

For Christmas last year my best friend gave me a cake mix for a vegan coconut cake. The cake was so incredibly yummy, I made it when we had guests over and everybody loved it! Now a Babyshower being another occasion I had to bake a cake for, I thought why not make a vegan coconut cake, so I could eat it without problems and a coconut cake is not something everybody brings or has eaten already;-)

The problem was I didn’t remember the recipe and I couldn’t find it anywhere and my friend didn’t reply in time…and I was a little pressed on time anyway. So what do I do? Well I think.

What goes with coconut? Lemon!
What goes with that? Chocolate!
Alright, now combining all that would make a coconut lemon chocolate cake.
That’s too much.
But I get started on making a VEGAN coconut lemon cake and writing the ingedrients and measurments on a piece of paper as I go, adjusting at some point or another. It’s not so easy just leaving out the eggs…

Once I’d managed to form a dough without using eggs, I baked the thing and added a coat of chocolate on top and done was my original recipe!

The cake was almost gone after the party and I got compliments on it and questions for the recipe.

Well (*flips hair*) it’s an original I just invented today! (*grins broadly*)

It feels good to be able to just throw together a cake that people really like! 🙂

Next time you’re going to a party , don’t panic, just make this one! It’s a cake not many people have eaten before. It’s special;-) But now..

Let’s get baking, shall we?

What you’ll need
  • 1 cup flour
  • 1 3/4 cup coconut flakes
  • 1/3 cup sugar
  • 8 tsp oil
  • 4 tsp coconut oil
  • zest of a whole lemon
  • juice of 1 lemon
  • 1/2 cup water
  • vanilla extract
  • baking powder



Combine and mix the dry ingredients. Grate the zest of one organic lemon, then juice it and add the juice into the mix.


Add the wet ingredients and mix thoroughly. Transfer the dough into a mould and bake for 30 min at medium high heat.


While it’s baking either melt chocolate or make your own easy vegan one with this recipe! Take out the cake and let it cool down.


If you want, add the homemade chocolate on top and let cool again!

I added blue sprinkles, since it was for a babyshower for a boy!

Now all there’s left to do is: Enjoy!!
